The most disappointing to me are big cucumbers. The little ones are oh so much tastier but how can you bear to throw away the ones that grew to epic proportion slyly concealed under an extra large cucumber leaf?
I like to peel these, take out the seeds if they are too bitter, and add the chopped cucumber to the zucchini and onions and celery in the vegetable soups I make. You can't tell which is zucchini and which is Cucumber. Really.
