Laura’s Big Blue Saskatoon Muffins

Preheat oven to 450o F
|
1 c sugar
|
½ c butter Cream
|
2 eggs Beat in
|
1/3 c milk Beat in
|
2 c flour
|
2 tsp baking powder Blend in
|
2 c frozen saskatoons Add
|
The batter will be very very stiff from the frozen berries. Scoop batter into 12 muffin tins, and sprinkle with white sugar.

Turn oven down to 400 degrees.

Laura sent me this recipe, from Slave Lake when she lived there. It called for blueberries but we had a double row of Smoky saskatoons on the farm, and they produced well most years, with enough to freeze for cupcakes. We made an incredible fresh Saskatoon cake, but that is another category altogether.
