Carrot Pineapple Cake

Carrot Pineapple Loaf Cake

COMBiNE
3 cup flour
2 c brown sugar
1 t cinnamon
1 t salt
1 t soda
1 t baking powder

BEAT TOGETHER AND ADD TO THE DRY INGREDIENTS
1 c oil
3 eggs

BEAT IN
1 c crushed pineapple, slightly drained
2 c grated carrot
1 t vanilla

ADD
1 c nuts
1 c coconut

Stir together, spoon into 2 loaf pans and bake T 350F for one hour

Orange Glaze
POUR OVER HOT CAKE AND LET SIT UNTIL COOL
2 Tbsp finely grated orange rind
3 Tbsp melted butter
4 T orange juice
Icing sugar to make runny icing

A good friend of mine, (who also taught me how to make drop of a hat meals) gave me this excellent loaf cake recipe. It also makes very nice muffins, and those who are fond of cream cheese icing May like to use that instead of orange glaze, but wait until they are cool to apply it.
