Jan's Mom's Rhubarb Pie Filling


Rhubarb Pie Filling



2 eggs
1 ½ c sugar
2 T flour
¼ tsalt
1 T butter     Blend well (blender or vitamix works well)

                      Pour over

4 c fruit         Bake in pie shell or as base of upside down cake.

This improves rhubarb pie or upside down cake (try under the white cake recipe) incredible.  Tastes custard like and wonderful.
