Three Day Cheese Cake

Well worth waiting for.

Donna’s Three Day Cheesecake
Graham Crumb Crust
 ½ c graham crumbs
1/3 c melted butter               Mix, press firmly into 9” springform pan
¼ c sugar                              Bake 10 minutes
Cheese Cake
3-8 oz pkg cream cheese, softened
½ tsp salt
1 Tbsp vanilla                        Cream together until soft.
4 eggs, room temperature      Add one at a time, beating well.
1 c sugar                                 Beat in gradually.                                            
                                               Pour into pan over crust.  Bake about 40-45                                                minutes until center jiggles slightly.  It will set
                                              up later.
                                               Let stand 10 minutes.
Topping
1 pint (2cups) sour cream
¼ c sugar
Vanilla                                  Blend and spread on top.  Increase oven
                                            temperature to 400o F.  Bake 5 minutes, until set.
                                             Cool in fridge before removing side.  This tastes                        
                                             Absolutely better when left alone for 3 days to age
                                              And mellow.  Top with fruit for serving.
