Hot Water Chocolate Cake

2 c white sugar

2/3 c oil

2 eggs

2 t vanilla Beat 4 minutes

2 2/3 c flour

2/3 c cocoa
| |
2 tsp baking powder
| |
2 tsp soda Blend, and add into the dry ingredients along with

2 c boiling water Beat well
| |
9x13 pan
| |
325 o until done
| |
This is the cake I usually make when the occasion calls for chocolate. On the farm I would occasionally make up a package of lemon pie filling, and pour it hot into the bottom of the pan, and pour the batter over it. It would bake into a tangy sauce that would save having to pack along cream or some other such item to make it “go down more easily” when serving meals out in the field.
