Greek Potatoes
Wedge potatoes, place in big roaster, and drizzle with olive oil.
I use my corelle red glass roaster; I would guess 8-12 cups of cut potaotes; and season accordingly. You know, like you would salt anything you would cook. If you make more potatoes, it will take more garlic powder, oregano, etc. This one is more technique than recipe.
Squeeze 3-4 lemons over
Oregano
Garlic Powder
Seasoning Salt Sprinkle on,
Pepper stir in
Chicken soup base sprinkled over top
Cut 1\4 butter into little pieces and set on top
Do not cover or they just don't do well
Start @ 400o for 5 minutes
Turn down to 350 o for 1 and a ½ hours
This was given to us by our friend Rebecca who got it from a friend who married a Greek. We love this, and make a large pot of them to enjoy over several days.
