Put one egg into a measuring cup.
Fill to ¾ cup with milk.
Fill to 1 c with oil.
Pour into a mixing bowl and add ¾ c sugar Beat
1 c flour
1 tsp vanilla or coconut flavouring
1 tsp baking powder Beat
Cook in an 8x8” pan @ 350o
This is a fast and easy little cake. Try mixing in ½ c frozen blueberries (wild are infinitely better, if you can get them) or pour over a can of pie filling emptied into the cake pan first, for a fast easy dessert. This recipe came out of my mother’s collection of bits and pieces copied from and cut out of newspapers over years of time.
