Cheryl's Good Idea

Cheryl has come up with a great idea for time saving. They still have a lot of potatoes in their cellar but they are a bit labour intensive to prepare from scratch every time. And when you homeschool every minute counts. So she tried peeling a couple days worth and keeping them in the fridge under cold water. That works. But her latest technique is cutting up a substantial amount of potatoes into quite small pieces. As in, smaller than I did but mine worked too. Then mix in olive oil and season salt or other seasonings of your choice. I also chopped in an onion, very fine. Bake on parchment paper at around 400 degrees until soft. You don't have to brown them. Just cook them. Then store in the fridge and take out what you need for a meal and gently heat in a slightly greased frying pan until they are yummy and brown.
Wonderful time saving method and they are quite delicious.

I am thinking this would be a great idea for when you have weekend guests. And do a search for cabbage salad on this blog and make up a jar of that. Then you could BBQ hamburgers or chicken...and have less to fuss over.
