Pintrest came through with another attention grabbing idea; jello as orange wedges. My plan next time is to cut back on liquid about 1/4 cup to made them a little more stable in the skins. I brought them as half orange skins filled with jello, and sliced them into wedges on site. Definitely the way to go. They wouldn't have survived an hour of jiggling in the back of the van.
