Good Cookies, Wheat free


coconut celiac cookies 
1 cup coconut oil
2 cup brown sugar, packed..........cream
5 eggs
1 T vanilla .....................................beat in
1 3/4 cup oat  flour
1 cup rice flour
3/4 c corn starch
1/2 tsp. salt
2 tsp. baking powder
1/2 tsp. baking soda....................blend in with wooden spoon or use
                                                          dough hooks on mixer
2 c semisweet chocolate chips 
1 cups shredded coconut optional.......add

Bake for about 8 - 9 minutes to 375 degrees F.  Grease a cookie sheet.
Let sit on the cookie sheet for a few minutes then cool on rack.
We polished off the whole batch one afternoon, when David, Cheryl, Joe, and Laura and all the little people were here.  Kiana was especially pleased about the wheatless quality of them.  They smell incredibly good baking.
