Jelly Roll

1 c sifted flour
1 tsp baking powder
Pinch salt sift together

4 eggs beat until light and foamy
|
1 c sugar beat into the foamy eggs, then fold in the flour
|
½ tsp lemon flavoring add
|
10x15 cookie sheet lined and greased
375o F for 12 to 15 minutes, but watch carefully so you don’t overcook it
|
Turn onto a moist towel sprinkled with icing sugar.
Spread with jam, roll up using the towel to help while still warm.
If the edges crack and give you grief cut them off with a very sharp bread knife.
Wrap in towel until cool, at least a ½ hour.
